Missy's Granola

I usually quadruple this and freeze it.

Preheat your oven to 300 degrees.

Wet Ingredients:

  • 1/4 c Artisana coconut butter, softened/melted
  • 1/2 c local honey
  • 1 T vanilla extract
  • 1 t cinnamon
  • 1/2 t salt

Mix the wet ingredients together in a medium-sized bowl.

Dry Ingredients:

  • 3 c. old fashioned oats
  • 1 large bag organic unsweetened coconut
  • sprouted walnuts, sunflower seeds, pecans, cashews, pumpkin seeds etc.
  • (I have added hemp hearts and chia seeds, too)

Mix the dry ingredients together.  Add the wet to the dry and mix it all together.  The best way to mix it (especially if quadrupled, is with your hands).

Spread the granola out on parchment paper lined baking sheets.

Bake for 15 minutes at 300 degrees.  Stir the granola around, shift pans if needed, and bake another 15 minutes.

Let it cool on a cooling rack and then put it into airtight containers.  I LOVE the way frozen granola tastes, so I always store mine in the freezer.
